One of the problems I faced during my weight management phase was to get that one scoop of whey protein supplement in my diet. Especially on days when I didn’t feel like having a smoothie, it was very difficult. This is an easy brunch or heavy breakfast recipe to help meet your protein targets. Cinnamon powder adds all the magic to this recipe.
Ingredients:
2 large eggs
1 scoop of whey protein
1 ripe banana(about 1/2-3/4 cup)
1tsp vanilla extract
1/2 tsp cinnamon powder
pinch of salt
2 tbsp butter
honey or maple syrup(optional)
whipped butter(optional)
Method:
In a blender jar, add eggs, banana, whey, vanilla, salt and cinnamon powder and blend into a foamy, smooth batter.
Heat a griddle or pan on medium flame, add butter and spread it on the pan evenly.
Spread the batter on the pan before the butter gets brown and let it cook on medium flame for 3-4 mins, until most bubbles have bursted.
Carefully flip the pancake and cook for a few more mins.
Serve hot with a light drizzle of wild honey or maple syrup, fresh seasonal fruit and whipped butter.
Notes:
You can reduce the butter to 1 tbsp or avoid it altogether and make this into a scramble.
