I have another quick and easy recipe for you to add to your weekday meal rotation. It can be prepared in a few mins. My recipe of BBQ sauce uses simple, no BS ingredients. Roasted cumin powder is the magic ingredient. If not chicken, you can use this as a dipping sauce or with pretty much any kind of roast meat recipes. BBQ Ribs is THE classic recipe of all time.
Ingredients:
For BBQ Sauce:
3 tbsp olive oil or ghee, divided.
1/4 cup onion, roughly chopped
1 tsp smoked paprika
1/4 tsp cayenne pepper(optional)
1/4 roasted cumin powder
1 tsp maple syrup or honey
1/2 tsp brown sugar
1 tsp tomato ketchup
salt to taste
For chicken:
3-4 chicken breasts
salt and pepper to taste
Method:
Pre-heat oven at 420F.
Add salt and pepper to the chicken breasts and set aside.
In a blender jar, mix all ingredients listed above for BBQ sauce and 2 tbsp olive oil and blend into a paste.
Grease a cookie sheet or a baking pan, pat dry chicken and place it on the sheet.
Generously apply BBQ sauce to the chicken, only one side should be enough. Drizzle some olive oil on top.
Bake the chicken breasts for 30mins, rest for 2mins and serve warm.
Notes:
If you don’t keep roasted cumin powder in your spice drawer, I would highly recommend you to spend some time this weekend to dry roast some cumin and make this powder. It will completely transform anything you make with plain cumin powder into a gourmet delicacy. We add it to our lemonade, yoghurt sides/raitas, chutneys etc.
I used black walnut syrup that I got from Farmer’s Market this week. The smokey flavor of the syrup goes perfectly well with this BBQ sauce.
Double the amount of cayenne pepper if you prefer making it spicier.
If you don’t mind having a lighter color sauce, use cane or refined sugar instead of brown sugar.
Replace sugar with 1 more tsp syrup if you want to avoid sugar.
