This recipe is best for weekend dinners when you want to eat something super tasty and don’t want to be in the kitchen all day. Make 1.5x the serving of chicken tikka for lunch and thaw the marinara sauce for making this pizza for dinner. Roasted garlic is the magic ingredient in this recipe. Check notes for a vegetarian version of this recipe.
Ingredients:
2 thin crust pizza base
1/2 cup pizza blend cheese(or cheese of your choice), grated
1/2 pound chicken, boneless and chopped into 1/2 inch cubes
1 tbsp hung curd or sour cream
1 tsp red chilli powder
1 tsp dried fenugreek leaves
1 pinch turmeric powder
1/4 tsp pepper powder
1 tsp lemon juice
salt to taste
2 tbsp olive oil
4-5 cloves of garlic
1/4 cup chopped vegetables(onion, capsicum)
1 tbsp pickled jalapeños(optional)
1 tbsp chopped olives(optional)
Method:
For chicken marination, add chicken, curd, pepper powder, chilli powder, crushed dried fenugreek, lemon juice and salt in a bowl. Marinate for 10 mins.
Lightly grease your cookie pan and add peeled garlic cloves to it. Place in the oven while you pre-heat it at 400 degrees F.
Remove pan from the oven when the oven is at 400F or the garlic turns golden. Set aside.
In a pan, add 1 tbsp olive oil and the marinated chicken. Cook for 15 mins on a medium-low flame turning halfway.
Brush you pizza bread with olive oil, spread generous amount of marinara sauce, vegetables, prepared chicken tikka, chopped roasted garlic and cheese on the pizza bread.
Season with salt and pepper for freshness and flavor, esp. if your cheese is unsalted.
Bake for 10-15 mins and serve immediately.
Notes:
Keep the chicken pieces as small as possible.
A mix of red and green bell peppers is recommended.
You can also chop the chicken into smaller pieces after it is cooked.
I also add roasted tomatoes to the pizza sometimes. My marinara sauce is made with roasted tomatoes so this recipe doesn’t need it.
You can make a vegetarian version of this recipe by replacing chicken tikka with Paneer Tikka. Roasted garlic is optional if you’re adding Lehsuni Panner Tikka.
