Quick and easy appetizer recipe to serve your vegetarian guests. Serve this with mint chutney if you have some stored in your fridge. For diet like ours, I always stock up on different chutneys because they can be used as marinades as well for chicken and panner tikkas. Crispy coat of browned garlic on paneer add the magic in this recipe.
Ingredients:
6 cloves garlic, chopped or thinly sliced
200 grams(or 1/2 pound) paneer, 1 inch cubes
2 tbsp butter
2 tbsp whole milk yoghurt
1 tsp red chilli powder
1 pinch turmeric powder
1 tsp mint, finely chopped(optional)
1 tsp gram flour, roasted(optional)
1/2 tsp lemon juice
salt to taste
Method:
Strain excess water from yoghurt.
Marinate panner cubes in yoghurt, mint, dried powdered spices, gram flour and salt for at least 20 minutes.
In a pan, add butter and garlic. Fry garlic for a minute until it turns pink.
Place marinated panner cubes into the pan and fry on a medium flame for 10 mins.
Gently turn each paneer cube and fry on a medium-high flame for 5-7 more mins. Remove from flame for turning if you want, in case it splutters too much. The paneer cubes should turn golden brown and crispy.
Turn off the flame, add lemon juice, mix gently and serve hot.
