Eating oats doesn’t have to be boring. If you’re from India, this recipe will remind you of festivals and celebrations. Of course, cardamom is the magic ingredient in this recipe. It doesn’t have any sugar but uses dates for a clean carb load.
Ingredients:
1 cup grass-fed whole milk
1/2 cup rolled oats
3 tbsp dates, roughly chopped
2 tbsp cashews, chopped into halves or quarters
2 tbsp walnuts, halves and pieces
1 tbsp raisins(optional)
1 pinch cinnamon powder
1 pinch cardamom powder, freshly ground
Method:
In a thick-bottom sauce pan, add milk and bring it to a boil.
Add cashews, raisins, dates and walnuts and cook for 2 more mins. Reduce dates to 2 tbsp if using raisins.
Add oats, cardamon and cinnamon powder and cook for 3 mins.
Serve immediately.
Notes:
If you have some time, pre-soak walnuts and cashews in milk or water for 15mins for best results.
If using, I add green raisins that we get in India. Slightly sour taste nicely complements the sweetness of this recipe.
Avoid buying quick oats if you can, these usually are the worst quality oats and more processed than the usual rolled oats.
