This is another recipe in the summer-special series which is very close to my heart. My mom always has a jar of this in her fridge in summers. Summers in India have very limited vegetable options, and this helps make those boring meals, super delicious. Cumin adds all the magic in this recipe.
Ingredients:
1 cup raw mango - peeled, deseeded and roughly diced
1/2 or 1/3 cup rapadura/jaggery, powdered or roughly chopped
1/4 cup onion, chopped
1 tsp cumin
1 tsp red chilli powder
salt to taste
Method:
Combine all ingredients in a grinder jar.
Grind to make a fine chutney. Serve chilled.
Notes:
Adjust jaggery from 1/3 cup to more based on the tartness of the mango you are using.
