Traditionally, rose was used in different forms in various recipes in summer because of its cooling properties. I love bringing these forgotten ingredients back to life and including it in my diet. I wished to create this recipe with gulkand, but since it is a jam usually made with a lot of sugar, I tried to tweak this to fit my lifestyle but also preserve the magic.
Ingredients:
1/4 cup dried organic rose petals
2-3 dates, pitted
10-12 cashews
1 cup whole milk
1 scoop unflavored whey protein powder, ~25g
2 egg yolks(optional)
1 tbsp rose water(optional)
Method:
Soak rose petals, cashews and dates in milk for at least 2 hours in the refrigerator.
In a blender jar, add this infused milk along with its soaked contents, egg yolks, protein powder and rose water if using for extra flavor. Add ice or more chilled milk at this stage if you like.
Blend everything together into a smoothie.
Garnish with some rose petals and serve immediately.
Notes:
For those who want to try the version with sugar could omit the dates and dried rose petals and add 2 tbsp gulkand and vanilla ice cream to the above ingredients. Garnish with a tsp of gulkand!
