Having a gloomy day? I got just the perfect recipe for you to try. So hearty and spicy but equally nourishing ramen recipe will instantly boost your mood. For anyone who loves garlic, this is going to be on the go-to recipe list. And as you might have guessed garlic is the magic ingredient in this recipe. This recipe makes 2 bowls of ramen.
Ingredients:
Ramen:
140-150grams rice noodles
1 tsp olive oil
water
Spicy broth:
1 tbsp sesame or olive oil
1 tbsp spicy red or green chilli peppers, chopped
1 1/2 tbsp asian chili powder
1 clove of garlic, chopped
4 cups chicken broth
2 tbsp soy sauce
1 tsp rice vinegar
ground pepper to taste
salt to taste
Chicken
2 chicken breasts or 3 boneless thighs
2 tbsp soy sauce
1 tsp rice vinegar
salt and pepper to taste
1 tsp ghee
1 tsp spicy red or green chilli peppers, chopped
Garnish:
1 Soft boiled egg
2 scallions, chopped
1 tsp sesame seeds
4 cloves of garlic, minced(about 3 tsp)
Method:
Cook ramen as per instructions on the pack Or Add ramen noodle cakes in boiling water and cook for about 3 mins on a medium flame and mix in olive oil. Transfer to a colander and drain the water. Rinse with cool tap water for a min. Add a little more olive oil if you need. Set aside.
In a bowl, mix soy sauce, vinegar, salt and pepper. Set aside.
In a sauce pan, add sesame oil or olive oil. Add chopped spicy peppers and garlic, sauté for 2mins.
Add red chilli powder to the sauce pan, mix well and add the soy sauce mixture to the pan immediately. Cook for 30seconds.
Add chicken broth to the sauce pan, bring it to boil let it simmer for 5-10mins.
In a bowl, add chicken, soy sauce, vinegar, salt and pepper and marinate for 30mins. Heat ghee in a pan. Add chopped red peppers and sauté for a min. Add marinated chicken to the pan and cover and cook on a medium-low flame for 30mins, turning half way.
In serving bowl, add 2 cups of prepared broth, minced garlic, prepared noodles, scallions, sesame seeds, prepared chicken and half a boiled egg. Serve immediately.
Notes:
If you want to make it spicier, add more fresh chilis. I use serrano peppers.
Be careful when adding salt because soy sauce has salt and if your broth also has salt you might have to omit it from the recipe altogether.
Quick tip to boil egg in microwave is to add egg in a bowl of water(about 3/4th filled) , add a pinch of baking soda and salt and microwave for 5mins. Let it sit in the water for 5 more mins to finish cooking.
You can substitute chicken with meat of your choice or tofu/paneer or just enjoy as is.
