There are only a few days left of the cold weather and you ought to make recipes with green-garlic that’ll stay in your taste-memory until the next winter. This recipe was requested by my friend Dhruten back in November but I couldn’t find any green-garlic in the US to make this sooner. Now that I am in India, it is readily available for me to try out new recipes made with this incredible herb.
Ingredients:
1 egg
2 tsp butter + ghee
2 tbsp green-garlic, chopped
1 tsp ginger-green chili paste
salt to taste
pepper powder, pinch
red pepper powder, pinch(optional)
Method:
Heat a non-stick pan on a medium flame, add 1 tsp butter and a few drops of ghee to prevent butter from burning.
Add ginger-chili paste and green garlic and fry for a minute.
Tilt the pan a little to separate the butter and collect on another side of the pan. You might have to separate the butter with a spoon.
Break an egg on this butter puddle and let it fry for 2 mins, until the egg white gets completely cooked.
Sprinkle salt and pepper on the garlic, mix it and transfer the spiced, fried garlic on the egg.
Turn up the flame to high and add remaining butter on the side. Once butter melts, pour the butter on the egg.
Turn off the heat and serve immediately.
